Title Spicy Beef Vegetable 
Preparation time 30 minutes 
Servings 6-8 
Ingredients 1-2 lbs stew meat (diced to 1/4 inch chunks)
1 medium onion (diced)
1 stalk of celery (diced)
1 large carrot (diced)
3 or more hot peppers (diced; jalapenos or long hots)
1 small yellow squash (chopped)
1 qt soup stock (chicken, beef or turkey all work)
Worcestershire sauce
3 C water
salt
pepper
olive oil
 
Method Prepare all ingredients. Heat stock pan on medium heat and add enough olive oil to cover pan bottom. Salt and pepper stew meat and add to pan. Add onions and stir until brown, removing water as needed. Add carrot, peppers, celery and heat through scraping bottom of pan. Add squash, water, Worcestershire (maybe 2 Tbsp) and stock, bring to a simmer.
At this point, continue to simmer for an hour or so or alternatively, place in crock pot for 4-8 hours. The meat is cooked in the beginning so the heat time realy just marries the flavors. Salt and pepper as needed.

Lastly, I came up with this based on vegetables I needed to use up. We like things a bit spicy and it really helped clear all of our sinuses. With that in mind, feel free to add whatever you like.
