Servings 4 dozen pieces 
Ingredients Dough
4C. Flour
2 tsp salt
2 TBsp olive oil
2 eggs beaten well
1C. water

Fillings

Potato and cheese:
2C. Mashed potatoes
½ C. Chopped onion
1 TBsp butter
½ C. Grated cheddar (more if desired)

Saute onion in butter. Add potatoes, heat through and add cheese. Mix well


Mushroom:
2 C. chopped mushrooms
2 TBsp butter

Saute mushrooms in butter

Roast beef:
2 C. cooked roast beef
Gravy or broth

Grind roast beef in food processor. Mix broth or gravy to moisten.

 
Method Combine flour and salt
Add rest of ingredients
Knead until smooth and elastic
Cover and let stand 15 min.
Roll out thin on foured board
Cut out rounds with a glass
If available, use pasta machine to roll out dough. Put it through each setting to get desired thickness. Leave extra dough covered until you use it.

Add 1 TBsp of filling to each round of dough. Fold over and pinch edges together well. When boiling, add salt and oil to water to prevent sticking. When the float on the surface, they are finished.
