Pumpkin Roll

Ingredients
3 eggs
1 cup sugar
2/3 cups cooked mashed pumpkin
1 teaspoon lemon juice
3/4 cup all purpose flour
2 teaspoons cinnamon
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon ginger
1 teaspoon nutmeg
1 + 1/4 cup powdered sugar
8 oz. Cream cheese
½ teaspoon vanilla
Method
Beat eggs five minutes at high speed.
Gradually add sugar, beating well.
Stir in pumpkin and lemon juice.
Combine flour, cinnamon, baking powder, salt, ginger, nutmeg.
Add to pumpkin mixture.
Blend well.
Grease and flour a jelly roll pan. (The Mixture is very thick.)
Bake at 375 degrees for 15 minutes.
Turn it on towel covered with powdered sugar, roll up in towel.
Cool ½ hour.
Mix 1 cup powdered sugar, cream cheese, and vanilla.
Beat and spread, re roll and slice.
Additionally, you can replace the pumpkin with banana and omit the ginger for banana roll.
