Title Apple Cake

Ingredients 1 C. Veg. Oil
3 C. Diced & Peeled Apples
2 C.Sugar
1 Cup Walnuts (Optional)
3 eggs
1 Tbsp. Flour
1 1/4 tsp. Vanilla
1 tsp. Baking soda
2 C. Cake Flour
1 tsp. Salt

For topping:
Stir together in heavy saucepan:
1/2 C. butter
1/4 C. milk
1 C. Brown Sugar

Bring to a boil , stir constantly and boil for 3 minutes. Spread at once over cake. 
Method Mix oil, eggs, and vanilla and beat for 3 minutes. Slowly add dry ingredients, beating with each addition. Stir in apples. Toss walnuts in flour to coat, stir into cake batter. Pour into greased and floured 9x13 pan and bake at 350 for about one hour or until toothpick comes out clean. Cool in pan on wire rack and spread with caramel topping.
