Title Slow Cooker Stuffing 
Preparation time 6-8 Hours 
Servings 10-12 
Ingredients 1 C butter
1 C finely chopped onions
2 C finely chopped celery
1/4 C parsley
12 oz mushrooms (optional)
15 C day old bread cubes (originally 12 but the spices were a bit much)
1 tsp poultry seasoning
1 1/2 tsp thyme
1/2 tsp marjoram
1 1/2 tsp salt
1/2 tsp pepper
4 1/2 C broth (turkey or chicken)
2 eggs beaten 
Method Coat inside of crock with butter or cooking spray.
Sautee onion and celery in saucepan with butter until tender. In a large mixing bowl, mix bread with all seasonings, toss with sauteed vegetables. Gently stir in the broth (start with 2 cups and add more as needed; reserve some for addition during cook time) Add eggs and toss to coat bread but do not overmix. Place into crockpot on high for 1 hour and then turn to low for 4-6 hours. Check as it cooks to ensure it isn't drying out. If so, add reserve broth.

Alternatively, you can bake the mixture in a buttered 13x9 casserole dish for 35-40 minutes at 350. I found that I was getting up early on Turkey day to get my stuffing in order instead of the actual turkey just so I can use the crockpot...
