Title Cheeseburger Soup 
Preparation time 35 Minutes 
Servings 2 1/2 Quarts 
Ingredients 1 to 1 1/2 lb ground beef
3/4 C chopped onion
3/4 C shredded carrot
3/4 C diced celery
1 tsp dried basil
1 tsp dried parsley flakes
4 tbsp butter or margerine - divided
3 C chicken broth
4 C peeled and diced potatoes
1/4 C flour
8 oz processed american cheese, cubed
1 1/2 C milk
3/4 tsp salt
1/4 - 1/2 tsp pepper
1/4 C sour cream 
Method In a 3 qt saucepan, brown beef, drain and set aside. In same pan, saute onion, carrots, celery, parsley and basil in 1 tbsp butter until veggies are tender. Add broth, potatoes and beef. Bring to a boil and reduce heat, cover and simmer 12 minutes or until potatoes are tender. In small skillet, melt remaining butter, add flour and cook 3 to 5 minutes until bubbly. Add to soup, bring to boil. Cook and stir two minutes. Reduce heat to low, add cheese, milk, salt and pepper. Cook and stir until cheese is melted. Remove from heat and stir in sour cream.
