Ingredients Puffs
1C water
½ C butter
1C flour
4 eggs
Preheat oven to 400°

Pudding
¾ C sugar
2 Tbsp cornstarch (3 Tbsp if using skim milk)
2 C milk (1 ¾ if using skim)
1 egg
2 Tbsp butter
1 tsp vanilla

 
Method Heat water and butter to boil in saucepan. Stir in flour. Stir over low heat until mixture forms a ball (about 1 min.) Remove from heat. Beat in eggs thorough y 1 at a time until smooth. Drop from spoon onto baking sheet. Bake at 400 ° for 45-50 minutes or until puffed. Allow to cool.

Pudding
Blend sugar and cornstarch in 1 qt. bowl. Add milk and stir well. Microwave on high 5-7 minutes stirring every 3 minutes. (Keep and eye on it in the microwave as it has a tendency to boil over!!) Stir small amount of pudding into well beaten egg. Pour egg mixture into hot pudding. Mix well. Microwave medium heat 1-3 minutes stirring every minute.
Add butter and vanilla and stir
