Title Cheddar Chowder

Ingredients 2 C Water
1/2 C Diced Carrots
1/4 C Chopped Onion
2 C Potatoes Peeled and Cubed
1/2 C Chopped Celery
1 tsp Salt
1/4 C Butter
1/4 C Flour
2 C Milk
2 C Grated Jalapeno Jack Cheese or Cheddar (or combined)
1 C Cubed Ham 
Method Combine water, potatoes, carrots, celery, onion, and salt in large kettle. Boil 10-12 minutes. In a small saucepan, make white sauce by melting butter; then add flour and stir until smooth (~1 minute). Slowly add milk. Cook until somewhat thickened then add grated cheese to white sauce. Stir until melted and then add white sauce to meat and undrained, cooked vegetables.

This recipe is versatile. You can add bacon instead of ham or try different cheeses. Also, you can add hot peppers vs. the jalapeno cheese. I usually make a double batch. It is really tasty! Enjoy.
